In 1921 Mr. Parker had acquired enough money to purchase a plant where we are still located. Judge Parker incorporated Parker House Sausage in 1927 and was the first African American to own and operate a meat processing plant in the Midwest. He was also the first African American to be awarded the official seal of the federal inspection approved by the United States Department of Agriculture.

Next, Mr. Parker purchased several refrigerated delivery trucks, providing the first opportunity for black driver-salesmen to drive commercial delivery trucks. This move broke the racial barrier for meat distributors not only in Chicago, but also in Indianapolis, Gary, St. Louis and Detroit where Mr. Parker sold his products.
