Archeological findings show that the various species of the agave plant is used by various people in Mexico for more than 9,000 years. From being used in beverages and as food condiments to fiber in ropes and clothing, agave has become a treasured plant for the ancients providing them with their needs. Usually mistaken as cacti, the agave plant is a subspecies of the class of plants known as Liliopsida or subclass Liliidae. In layman's terms, it is actually a lily. The plant takes 5 to 8 years to mature before its nectar can be harvested. Today, the mention of agave nectar brings to mind "tequila" as the nectar from the plant Agave Tequilana is used in the making of tequila for more than 150 years. Unknown to many, agave nectar also makes for a great tasting versatile sweetener that can be used in lieu of sugar, honey, maple syrup and engineered sweeteners like sucralose and aspartame. In the past few years, agave has become the preferred sweetener by many for being healthy and natural. Out of more than 200 to 300 different species of agave plants, Xagave agave nectar is a blend of two varieties. The nectar of both blue and white agave plants are extracted from the root or bulb of the plant. The extraction process for both plants are very different. For Agave Tequilana, the root is dug up from the ground and cut from the rest of the plant. It is then ground and the pulp ran through water which extracts the fibrous materials (fructans). This water and fructans mix is then is then heated to break down the fructans to sugars fructose and glucose. For Agave Salmiana or white agave, the nectar can't be extracted till the plant matures and flowers. The agave flower grows eight to ten feet in height. Just before the flower begins to grow, the stem which resembles a beam of wood is cut off at its base and the plant is milked of its nectar for several months. The extracted nectar is then distilled in a vacuum container at temperatures below 118 degrees Fahrenheit to reduce it to the right brix levels while keeping it raw.

There are several brands of agave nectar in the market today. These brands are either from blue or white agave. The way the nectar is processed also brings about different colors of agave nectar from light, medium amber to a dark syrup. Each of these taste different and have an appropriate use or application. Of the three, light syrup from white agave is the cleanest tasting. The darker the agave nectar, the more processed it is and is not really more healthy.
